Tenuta Ibidini

Wines produced for Tenuta Ibidini, Valle dell’Acate’s second label, vary widely and are intended for casual consumption. The name was inspired by a company-owned estate – Bidini – where some of the family’s ancient grapevines are located. These vines provide living testimony to family tradition and their ability to carefully and constantly safeguard the surrounding environment and local history.
There are three wines sold under the Tenuta Ibidini label: a Syrah, a Nero d’Avola and an Insolia.

Insolia

Produced in: C. da Bidini – Acate (RG) – eastern Sicily
Appellation: D.O.C Sicilia Bianco
Soil typology: medium mixture tending towards compact, fragments of calcareous stone
Grape Variety: 100% Insolia
Methods of growth: espaliers and cord, 3.200-4.500 plants/hectare
Production per hectare: 9,500 kg
Harvest period: the second-half of august
Aging process: steel vats for 4 months; bottle-aged for at least 2 months
Alcohol level: 12%
Color: straw-colored yellow
Aroma: citrus fruits and jasmine scents
Flavor: very fresh and fruity, acidity in balance
Best paired with: appetizers, fresh cheeses, party wine.
Serve at: 10°-12° C.


Nero d’avola

Appellation: D.O.C Sicilia Rosso
Soil typology: medium mixture tending towards compact, fragments of calcareous stone
Grape Variety: 100% Nero d’Avola
Methods of growth: espaliers and cord, 3.200-4.500 plants/hectare
Production per hectare: 9000 kg
Harvest period: the beginning of september
Aging process: steel vats for 6 months
Alcohol level: 13.5%
Color: ruby red
Aroma: intense and fruity, small red fruits and spices including liquorice; hints of leather and mild game meats
Flavor: fresh and velvety, harmonious
Best paired with: simple meat dishes, party wine, grilled vegetables
Serve at: 14°-16° C.
